Starchy food begin to break down in the mouth as they enter the body with the aid of salivary amylase. The secretion of the pancreas would then start to help the digestion process as the food enters the first section of the small intestine, duodenum. Thus, the answer is pancreatic juice or the pancreatic amylase.
